Zucchini Garlic Bites

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 400˚F. Lightly coat a baking sheet with olive oil or non-stick spray and set it aside.
  2. Prepare the Zucchini:
    • Use a box grater to grate the zucchini onto a clean towel. Roll up the towel and twist to wring out as much moisture as possible. This step is crucial to ensure that the bites hold together well and don’t become soggy.
  3. Mix the Ingredients:
    • In a medium bowl, combine the drained zucchini, finely grated garlic, breadcrumbs, grated Parmigiano-Reggiano cheese, egg, chives, parsley, basil, oregano, salt, and pepper. Mix well to ensure that all the ingredients are evenly distributed.
  4. Form the Bites:
    • Take about a tablespoon of the mixture and shape it into a small ball using your hands. Pat it gently into a firm ball and place it on the prepared baking sheet. Repeat with the remaining mixture.
  5. Bake:
    • Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the bites are golden brown and firm to the touch.
  6. Serve:
    • Serve the zucchini garlic bites warm with a side of marinara sauce for dipping.
