Prep Dill for the Winter and Beyond

Cooking Method:

  1. Prepare the Dill:
    • Coarsely chop the dill, including the stems, and place it in the blender bowl.
  2. Add Garlic and Lemon:
    • Add the garlic cloves, lemon zest, and lemon juice to the blender.
  3. Toast the Walnuts:
    • Pour boiling water over the walnuts and let them stand for 5 minutes.
    • Drain the water and fry the walnuts in a dry frying pan until they are slightly golden brown.
    • Allow the toasted walnuts to cool slightly, then transfer them to the blender.
  4. Blend Ingredients:
    • Add the sugar, salt, and vegetable oil to the blender.
    • Blend all the ingredients together until you achieve a smooth paste-like consistency.
  5. Store the Paste:
    • Transfer the finished paste into clean, dry jars.
    • Close the lids tightly and store the jars in the refrigerator or cellar.
