Pineapple Pecan Cake with Cream Cheese Frosting

Preparation

Cake:

  1. Preheat and Prepare Pan:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or non-stick spray.
  2. Mix Dry Ingredients:
    • In a large bowl, combine the flour, sugar, and baking soda.
  3. Add Wet Ingredients:
    • Add the eggs, crushed pineapple with its juice, and the chopped pecans (if using) to the dry ingredients. Stir just until the mixture is moistened and well combined. Do not overmix.

Icing:

  2. Frost the Cake:
    • Once the cake is completely cooled, spread the cream cheese frosting evenly over the top using a spatula. You can use all the frosting for a thick, luscious layer.
