Parmesan Zucchini Fries

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare Zucchinis:
    • Wash and cut the zucchinis into thin strips, about 1/4 inch thick. You can also cut them into rounds if preferred.
  3. Set Up Breading Station:
    • In a shallow dish, place the flour.
    • In a second shallow dish, beat the eggs.
    • In a third shallow dish, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried oregano, salt, and pepper.
  4. Bread the Zucchini Fries:
    • Dip each zucchini strip into the flour, coating it evenly. Shake off any excess.
    • Next, dip the zucchini into the beaten eggs, letting any excess drip off.
    • Finally, coat the zucchini in the Parmesan-breadcrumb mixture, pressing gently to ensure it sticks.
  5. Arrange on Baking Sheet:
    • Place the coated zucchini fries in a single layer on the prepared baking sheet. Make sure they are not touching to ensure even cooking.
  6. Bake:
    • Lightly spray the zucchini fries with olive oil spray to help them crisp up.
    • Bake in the preheated oven for 20-25 minutes, or until the fries are golden brown and crispy. Flip halfway through cooking for even browning.
  7. Serve:
    • Allow the zucchini fries to cool slightly before serving. They are delicious on their own or with a dipping sauce like marinara, ranch, or aioli.
