
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Prepare the Dry Ingredients:
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Mix Wet Ingredients:
- In another bowl, beat the eggs with the sugar until well combined.
- Add the vegetable oil, Greek yogurt, orange zest, orange juice, and vanilla extract. Mix until smooth.
- Combine and Add Zucchini:
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the grated zucchini.
- Bake:
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
- Cool:
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Prepare the Glaze:
- In a small bowl, whisk together the powdered sugar, orange juice, and orange zest until smooth. If the glaze is too thick, add a bit more orange juice until it reaches your desired consistency.
- Glaze the Bread:
- Once the bread has cooled, drizzle the orange glaze over the top. Let the glaze set for a few minutes before slicing.
