Orange Zucchini Bread with Orange Glaze

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Prepare the Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients:
    • In another bowl, beat the eggs with the sugar until well combined.
    • Add the vegetable oil, Greek yogurt, orange zest, orange juice, and vanilla extract. Mix until smooth.
  4. Combine and Add Zucchini:
    • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
    • Fold in the grated zucchini.
  5. Bake:
    • Pour the batter into the prepared loaf pan and spread it evenly.
    • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  6. Cool:
    • Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  7. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar, orange juice, and orange zest until smooth. If the glaze is too thick, add a bit more orange juice until it reaches your desired consistency.
  8. Glaze the Bread:
    • Once the bread has cooled, drizzle the orange glaze over the top. Let the glaze set for a few minutes before slicing.
