Ingredients:
- 1 cup shredded coconut (sweetened or unsweetened)
- 1 cup diced fresh pineapple (or canned pineapple chunks, drained)
- 1 cup chopped ripe bananas (about 2 medium bananas)
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract (optional)
- Pinch of salt
