Korean Pickled Garlic

Instructions:

  1. Prepare the Brine:
    • In a medium saucepan, combine the soy sauce, rice vinegar, sugar, and water. Bring to a boil over medium heat, stirring until the sugar dissolves.
  2. Cool the Mixture:
    • Once the mixture reaches a boil, remove it from the heat and let it cool to room temperature.
  3. Prepare the Garlic:
    • Place the peeled garlic cloves in a clean, sterilized jar.
  4. Add the Brine:
    • Pour the cooled soy sauce mixture over the garlic cloves, ensuring they are fully submerged.
  5. Seal and Store:
    • Seal the jar tightly and store it in a cool, dark place for at least one week before using to allow the flavors to develop.
  6. Refrigerate:
    • After one week, transfer the pickled garlic to the refrigerator. They can be stored in the refrigerator for several months.
