Homemade Gummy Fruit Snacks

Instructions:

  1. Prepare the Juice Mixture: In a medium saucepan, combine the fruit juice, honey (or maple syrup), and lemon juice. Heat over medium heat, stirring occasionally, until the mixture is warm but not boiling.
  2. Add Gelatin: Slowly sprinkle the gelatin powder over the warm juice mixture while stirring constantly to prevent clumps from forming. Continue stirring until the gelatin is fully dissolved. If using fruit puree, add it at this stage.
  3. Heat and Stir: Continue to heat the mixture over medium heat for 2-3 minutes, stirring frequently. Do not let it boil.
  4. Pour into Molds: Remove the saucepan from heat. If desired, stir in vanilla extract. Pour the mixture into silicone molds or a baking dish lined with parchment paper for easy removal.
  5. Chill: Refrigerate the molds or dish for at least 2 hours, or until the gummies are fully set.
  6. Remove and Store: Once set, remove the gummies from the molds or cut them into desired shapes if using a baking dish. Store the gummies in an airtight container in the refrigerator for up to 2 weeks.
