Green Tea, Lemon & Ginger Gummies

Instructions:

  1. Prepare the Green Tea:
    • Brew the green tea according to the package instructions and let it cool completely before use.
  2. Combine Ingredients:
    • In a medium saucepan, combine the water, green tea, lemon juice, and grated ginger. Stir well to mix all the ingredients.
  3. Add Sweetener:
    • Stir in the honey or maple syrup until it’s fully dissolved into the mixture, adding natural sweetness.
  4. Heat Mixture:
    • Place the saucepan over medium heat and bring the mixture to a gentle simmer.
  5. Mix Gelatin and Pectin:
    • In a small bowl, mix together the gelatin powder and fruit pectin.
  6. Add Gelatin and Pectin:
    • Gradually whisk the gelatin and pectin mixture into the hot liquid, stirring continuously until it dissolves completely.
  7. Simmer and Thicken:
    • Allow the mixture to simmer for about 5 minutes, stirring frequently until it thickens slightly. This helps ensure that the gummies will hold their shape.
  8. Pour into Molds:
    • Remove the saucepan from heat and carefully pour the mixture into gummy molds or a lightly greased baking dish if you don’t have molds.
  9. Cool and Set:
    • Let the gummies cool to room temperature before refrigerating them for at least 2 hours or until fully set.
  10. Remove and Store:
    • Once set, gently remove the gummies from the molds. If using a baking dish, cut the gummies into bite-sized pieces.
    • Store the gummies in an airtight container in the refrigerator for up to 2 weeks.
