Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine the ground chicken, diced onion, pressed garlic, bread crumbs, egg, minced parsley, and grated Parmesan cheese.
- Season the mixture with salt and freshly cracked black pepper to taste.
- Mix all the ingredients thoroughly until well combined.
- Form the Meatloaves:
- Divide the mixture into equal portions and shape them into small individual meatloaves. This recipe should make several mini meatloaves, perfect for individual servings.
- Place the formed meatloaves on the prepared baking sheet.
- Bake:
- Bake the meatloaves in the preheated oven for 25-30 minutes, or until they are cooked through and the internal temperature reaches 165°F (74°C).
- Optional Topping:
- If you like, sprinkle extra fresh grated Parmesan cheese on top of each meatloaf during the last 5 minutes of baking. This will add a delicious cheesy crust.
- Serve:
- Once baked, remove the meatloaves from the oven and let them rest for a few minutes before serving. This allows the juices to redistribute, keeping the meatloaves moist.
- Serve warm, garnished with additional fresh parsley if desired.
