Garlic Parmesan Chicken Meatloaves

Instructions

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground chicken, diced onion, pressed garlic, bread crumbs, egg, minced parsley, and grated Parmesan cheese.
    • Season the mixture with salt and freshly cracked black pepper to taste.
    • Mix all the ingredients thoroughly until well combined.
  3. Form the Meatloaves:
    • Divide the mixture into equal portions and shape them into small individual meatloaves. This recipe should make several mini meatloaves, perfect for individual servings.
    • Place the formed meatloaves on the prepared baking sheet.
  4. Bake:
    • Bake the meatloaves in the preheated oven for 25-30 minutes, or until they are cooked through and the internal temperature reaches 165°F (74°C).
  5. Optional Topping:
    • If you like, sprinkle extra fresh grated Parmesan cheese on top of each meatloaf during the last 5 minutes of baking. This will add a delicious cheesy crust.
  6. Serve:
    • Once baked, remove the meatloaves from the oven and let them rest for a few minutes before serving. This allows the juices to redistribute, keeping the meatloaves moist.
    • Serve warm, garnished with additional fresh parsley if desired.
