Garlic Herb Roasted Potatoes, Carrots, and Zucchini
Instructions:
Preheat Your Oven:
Start by preheating your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
Prepare the Vegetables:
In a large mixing bowl, combine the diced potatoes, sliced carrots, and sliced zucchini. Drizzle the olive oil over the vegetables and toss them well to ensure they are evenly coated.
Add the Seasonings:
Add the minced garlic, dried rosemary, dried thyme, salt, and pepper to the bowl with the vegetables. Mix everything together until the vegetables are evenly coated with the herbs and seasoning.
Roast the Vegetables:
Spread the seasoned vegetables in a single layer on the prepared baking sheet. This helps them roast evenly and develop a nice golden-brown color.
Place the baking sheet in the preheated oven and roast for 25-30 minutes. Be sure to stir the vegetables halfway through the cooking time to promote even browning.
