Easy Zucchini Puffs

Instructions:

  1. Preheat Oven and Prepare Baking Sheet:
    • Preheat your oven to 400°F (200°C).
    • Grease a baking sheet with olive oil or line it with parchment paper.
  2. Prepare the Zucchini:
    • Grate the zucchinis and squeeze out as much moisture as possible using a clean kitchen towel or paper towels. Removing the excess moisture will help the puffs hold their shape during baking.
  3. Mix Ingredients:
    • In a large bowl, combine the grated zucchini, Parmesan cheese, mozzarella cheese, flour, eggs, parsley, garlic powder, onion powder, salt, pepper, and baking powder.
    • Mix until all the ingredients are well combined and form a batter-like consistency.
  4. Form the Puffs:
    • Using a spoon or small cookie scoop, drop mounds of the zucchini mixture onto the prepared baking sheet. Flatten each mound slightly with the back of the spoon to ensure even cooking.
  5. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the puffs are golden brown and set in the center. Check them around the 15-minute mark to avoid over-baking.
  6. Cool and Serve:
    • Allow the zucchini puffs to cool slightly on the baking sheet before serving. Enjoy them while they’re warm and crispy.
