DEPRESSION ERA SALAD

Dressing:

  • 1 cup oil
  • 1/2 cup warm water
  • 1 1/2 cups white vinegar
  • 10-12 tablespoons sugar
  • 1 tablespoon salt
  • 1 tablespoon garlic powder

Directions:

  1. Prepare the Vegetables:
    • Slice the cabbage, cucumbers, red onion, radishes, and celery thinly.
    • If using green peppers, slice them as well.
    • Place all the sliced vegetables in a large bowl.
  2. Make the Dressing:
    • In a separate bowl, mix the warm water, sugar, and salt. Stir until dissolved.
    • Add the vinegar and oil to the mixture and mix well to combine.
  3. Combine and Pack:
    • Pour the dressing over the sliced vegetables and mix thoroughly, ensuring all the vegetables are well coated.
    • Pack the salad tightly into jars, leaving a little room at the top.
    • Pour any leftover dressing equally into the jars to cover the vegetables.
  4. Refrigerate and Serve:
    • Refrigerate the jars until ready to eat. The salad will develop its flavor as it sits and can be enjoyed for several weeks.
