Dandelion & Honey Gummy Bears

Instructions:

  1. Prepare the Dandelion Tea:
    • In a small saucepan, combine the dandelion petals and water.
    • Bring to a boil, then reduce the heat and let it simmer for 5-10 minutes.
    • Remove from heat and let the tea steep for an additional 10 minutes.
    • Strain the liquid to remove the petals, leaving you with dandelion tea.
  2. Mix with Honey:
    • Add honey to the dandelion tea and stir until fully dissolved.
    • Taste and adjust the sweetness if needed.
  3. Bloom the Gelatin:
    • In a small bowl, sprinkle the gelatin powder over 1/4 cup of the cooled dandelion and honey mixture.
    • Let it sit for a few minutes to allow the gelatin to absorb the liquid and bloom.
  4. Combine and Heat:
    • Pour the bloomed gelatin into the remaining dandelion and honey mixture in the saucepan.
    • Gently heat the mixture over low heat, stirring constantly until the gelatin is completely dissolved. Do not let it boil.
  5. Fill the Molds:
    • Carefully pour the mixture into silicone gummy bear molds using a dropper or spoon.
    • Gently tap the molds on the counter to remove any air bubbles.
  6. Chill:
    • Place the molds in the refrigerator for at least 1-2 hours, or until the gummies are fully set.
  7. Unmold and Store:
    • Once set, remove the gummy bears from the molds.
    • Store them in an airtight container in the refrigerator for up to 1 week.
