Dandelion & Honey Gummy Bears

Instructions:

  1. Make Dandelion Tea:
    • To prepare dandelion tea, steep 1 cup of fresh dandelion flowers (or 2 tablespoons of dried flowers) in 1 1/4 cups of hot water for about 10-15 minutes.
    • Strain the flowers out and set aside 1 cup of the tea for the gummy mixture.
  2. Mix Honey and Tea:
    • In a small saucepan, heat the dandelion tea over low heat.
    • Add the raw honey and stir until fully dissolved. Be careful not to let the mixture boil, as high heat can reduce the beneficial properties of the honey.
  3. Bloom the Gelatin:
    • Slowly whisk the gelatin powder into the warm tea mixture, stirring constantly to avoid clumps.
    • Continue stirring until the gelatin has completely dissolved, ensuring a smooth consistency.
  4. Add Lemon Juice (Optional):
    • For a touch of tanginess, stir in the lemon juice. This adds a slight citrusy flavor that complements the sweetness of the honey.
  5. Fill Molds:
    • Using a dropper or spoon, carefully fill the silicone gummy bear molds with the mixture.
    • Tap the molds gently on the counter to release any air bubbles and ensure the mixture settles evenly.
  6. Chill the Gummies:
    • Place the filled molds in the refrigerator and allow the gummy bears to set for at least 1 hour, or until they are firm to the touch.
  7. Remove and Store:
    • Once the gummies are set, gently pop them out of the molds.
    • Store the gummy bears in an airtight container in the refrigerator, where they will keep for up to 1 week.
