
Instructions:
- Make Dandelion Tea:
- To prepare dandelion tea, steep 1 cup of fresh dandelion flowers (or 2 tablespoons of dried flowers) in 1 1/4 cups of hot water for about 10-15 minutes.
- Strain the flowers out and set aside 1 cup of the tea for the gummy mixture.
- Mix Honey and Tea:
- In a small saucepan, heat the dandelion tea over low heat.
- Add the raw honey and stir until fully dissolved. Be careful not to let the mixture boil, as high heat can reduce the beneficial properties of the honey.
- Bloom the Gelatin:
- Slowly whisk the gelatin powder into the warm tea mixture, stirring constantly to avoid clumps.
- Continue stirring until the gelatin has completely dissolved, ensuring a smooth consistency.
- Add Lemon Juice (Optional):
- For a touch of tanginess, stir in the lemon juice. This adds a slight citrusy flavor that complements the sweetness of the honey.
- Fill Molds:
- Using a dropper or spoon, carefully fill the silicone gummy bear molds with the mixture.
- Tap the molds gently on the counter to release any air bubbles and ensure the mixture settles evenly.
- Chill the Gummies:
- Place the filled molds in the refrigerator and allow the gummy bears to set for at least 1 hour, or until they are firm to the touch.
- Remove and Store:
- Once the gummies are set, gently pop them out of the molds.
- Store the gummy bears in an airtight container in the refrigerator, where they will keep for up to 1 week.
