Cupcake Brownies: Crispy Outside, Chewy Inside

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Brownie Mix:
    • In a large bowl, prepare the brownie mix according to the package instructions. This usually involves adding eggs, oil, and water.
    • Add an extra egg to the mixture. This helps create a chewier texture inside the brownies.
  3. Prepare the Muffin Pans:
    • Spray two 12-cup muffin pans very well with nonstick cooking spray. This ensures the brownie cupcakes will pop out easily once baked.
  4. Fill the Muffin Pans:
    • Evenly divide the brownie batter among the 24 muffin cups. Fill each cup about 3/4 full to allow room for the brownies to rise.
  5. Bake:
    • Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a cupcake brownie comes out with a few moist crumbs (not wet batter).
  6. Cool:
    • Let the brownie cupcakes cool in the pans for about 5 minutes. This helps them firm up slightly and makes them easier to remove.
  7. Remove from Pans:
    • Carefully use the tip of a butter knife to pop the brownie cupcakes out of the muffin pans. Place them on a wire rack to cool completely, or enjoy them warm.
