Crispy Baked Zucchini Chips

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Zucchini:
    • Place the zucchini slices in a large bowl and sprinkle with a little salt. Let them sit for about 10 minutes to draw out excess moisture. Pat them dry with paper towels.
  3. Set Up Breading Station:
    • Set up a breading station: Place the flour in one shallow bowl, beat the eggs in another shallow bowl, and combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, salt, and black pepper in a third shallow bowl.
  4. Bread the Zucchini Slices:
    • Dredge each zucchini slice in the flour, shaking off any excess. Dip it into the beaten eggs, then coat it with the breadcrumb mixture, pressing gently to adhere.
  5. Arrange on Baking Sheet:
    • Arrange the breaded zucchini slices in a single layer on the prepared baking sheet. Lightly spray the tops with olive oil spray.
  6. Bake the Chips:
    • Bake for 15-20 minutes, flipping halfway through, until the zucchini chips are golden brown and crispy.

    • Remove from the oven and let cool slightly before serving.
