Cheddar, Chive, and Zucchini Quick Bread

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease or line a 9×5-inch loaf pan with parchment paper.
  2. Prepare the Dry Ingredients:
    • In a large bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, baking powder, salt, and black pepper.
  3. Add Cheese and Chives:
    • Stir in the shredded cheddar cheese and chopped chives until evenly distributed throughout the flour mixture.
  4. Mix the Wet Ingredients:
    • In a separate bowl, whisk together the milk, olive oil, and eggs until well combined.
  5. Combine the Mixtures:
    • Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the bread tough.
  6. Fold in Zucchini:
    • Gently fold in the grated zucchini, ensuring it is evenly incorporated into the batter.
  7. Pour into Pan:
    • Pour the batter into the prepared loaf pan, spreading it evenly.
  8. Bake:
    • Bake for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
