Place the milk, sugar, baking mix, eggs, butter, and vanilla extract in a blender.
Cover and blend on low speed for about 3 minutes, until smooth and well combined.
Prepare the Pie Plate:
Grease a 9-inch pie plate to prevent sticking.
Pour the blended mixture into the greased pie plate.
Add Coconut Topping:
Sprinkle the sweetened coconut evenly over the top of the mixture.
Bake the Pie:
Bake in the preheated oven for 40 minutes, or until the center is set and the top is golden brown.
Note: Depending on your oven, the baking time might be closer to 50-55 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.
Cool and Serve:
Let the pie cool slightly before serving to allow it to set properly.
