Almond Joy Cookies

Directions:

  1. Preheat and Prep:
    • Preheat your oven to 375°F (190°C). Lightly grease cookie sheets or line them with parchment paper.
  2. Combine Dry Ingredients:
    • In a medium bowl, combine the flour, baking soda, and salt. Set aside.
  3. Cream Butter and Sugars:
    • In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy.
  4. Add Eggs and Vanilla:
    • Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Mix Dry and Wet Ingredients:
    • Gradually stir in the dry ingredients until well mixed.
  6. Fold in Add-ins:
    • Fold in the chocolate chips, sweetened coconut, and chopped almonds until evenly distributed throughout the dough.
  7. Shape the Cookies:
    • Drop by rounded tablespoonfuls onto the prepared cookie sheets.
  8. Bake:
    • Bake for 8 to 10 minutes, or until the edges are lightly browned.
  9. Cool:
    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
